From coastal chic to city sleek, the island&rsquo;s Japanese food scene has never looked better.

Teeny Cala Carb&oacute; has long been the haunt of locals thanks to its cutesy cove, crystal waters and two retro chiringuitos. It now has world-class sushi, courtesy of the prettiest hotel to pop up on Ibiza for years. <a href="https://www.petuniaibiza.com/en/gastronomy/">Petunia</a>, perfectly perched atop a hill above the bay, has stolen the show with its rooftop restaurant, La Mirada, where contemporary Japanese dishes and thoughtful cocktails have the ultimate backdrop &ndash; jaw dropping views (Ibiza&rsquo;s best) of the mystical, magnetic rock of Es Vedr&aacute;. Supper starts early here to make the most of the blinding views, so book a 7pm table, bring a date, and kick back with a Yangts&eacute; cocktail &ndash; a blend of fruity sake, Midori, lychee, lavender syrup and basil tonic. The flambeed scallop with soya and lime zest is unforgettable.

The north&rsquo;s finest Japanese cuisine comes from the hands and heart of one of Ibiza&rsquo;s most loved healers, Melchior Arnold, and the combination of sushi and soul is remarkable. Set in a converted finca on the fabled San Juan Road, <a href="https://nagairestaurant.com/">Nagai</a> is an Ibiza lover&rsquo;s paradise, with a warren of teeny rooms indoors (fireside suppers in winter a classic) and an enclosed outdoor courtyard where fairy lights hang from olive trees in summer. The building oozes history &ndash; it is 250 years old and was once home to the fabulous Ocho restaurant, owned by Leah Tilbury, sister of the makeup artist Charlotte) &ndash; and eschews the glossy modernism of many sushi restaurants in favour of a bohemian, artsy vibe. The menu combines Japanese craft with some distinctly local flavours &ndash; think Nagai Ibizencan salad with local red potatoes, tomatoes, red onion, sea bass &amp; bluefin tuna and has house versions of classics&nbsp; like ceviche.

This <a href="https://sushiyaaoyamaibiza.business.site/">tiny backstreet joint</a> has been open for ten years now &ndash; a lifetime in Ibiza &ndash; and for good reason. This is sushi for purists, made by a master of the craft &ndash; Hideoki Aoyama &ndash; whose deft handling of fish and rice has earned him a formidable reputation among locals and fellow restaurateurs alike. The locale is akin to one you might find in Tokyo &ndash; sparse, utilitarian and hidden in an alley &ndash; and this raw experience, combined with the radical freshness of the ingredients make this the most authentic sushi experience on the island by miles. The sashimi made with a daily selection of local fish is outstanding and they offer takeaway too, so no excuses.
