Vegan, seasonal and balanced, we love the butternut, ginger and coconut milk soup. The healthy restaurant Jour gave us its perfect recipe.

For 4 people. Preparation time: 40 mins.

Ingredients :
- 600g <a href="https://www.lofficielibiza.com/food/recipe-how-to-make-autumn-comforting-risotto" target="_blank" rel="noopener">butternut squash</a>
- 20 cl of coconut milk
- 1 large potato (or 2 small)
- 1 medium onion
- 1 stick of fresh lemongrass
- 8g of fresh ginger
- 1 teaspoon of salt
- 1 tablespoon of sunflower oil
- 45cl of water

Preparation :
Peel the onion, remove the central germ then chop it finely. Peel the fresh ginger and chop finely. Cut the stick of fresh lemongrass into four. Tip: use dehydrated lemongrass if you can't find fresh one (1 tablespoon).
Peel the butternut squash, cut it in half and remove all the seeds in the center, keeping them for the rest of the recipe. Time-saving tip: use frozen butternut squash in cubes.
Peel the potatoes and cut them into small pieces. Heat the oil in a large saucepan and saut&eacute; the onion for 5 minutes. Add the <a href="https://www.lofficielibiza.com/food/recipe-how-to-make-autumn-comforting-risotto" target="_blank" rel="noopener">butternut squash</a> , potatoes, <a href="https://www.lofficielibiza.com/food/thanksgiving-the-warm-recipe-that-changes-from-the-traditional-turkey" target="_blank" rel="noopener">ginger</a> and lemongrass. Add water, bring to a boil
Cover and cook over medium heat for 15-20 minutes, until the vegetables are tender (check with the tip of a knife).
Remove the lemongrass sticks.
Add the coconut milk and salt then mix with an immersion blender or blender. Adjust the seasoning if necessary.
Serve hot! Enjoy your lunch ! Zero waste tip: sprinkle your soup with the seeds that you have previously washed, dried and roasted in the oven for 15 min at 180&deg; with a pinch of salt
