Nothing captures the essence of summer better than a delicious vegetable tian, an iconic Provençal recipe, here offered by <a href="https://www.mb-1830.com/fr/?srsltid=AfmBOor499WvYRotmB1s44ZgXC6W_x9w-GWwhWkNExt2tK1RIO-9Bq37" target="_blank" rel="noopener">Brémond Fils</a> .

Perfect to accompany a sunny barbecue or as a main dish to share with friends, this colourful mix of seasonal vegetables is as simple as it is tasty. Easy to prepare, it highlights the authentic flavours of the Proven&ccedil;al terroir, offering an explosion of Mediterranean tastes that will delight all guests.

For 6 people. Preparation: 30 minutes. Cooking: 1 hour.

Ingredients :
<ul class="ul1">
 <li class="li1" style="text-align: justify;">4 tablespoons extra virgin olive oil flavoured with rosemary</li>
 <li class="li1" style="text-align: justify;"> 5 tomatoes</li>
 <li class="li1" style="text-align: justify;"> 2 medium eggplants</li>
 <li class="li1" style="text-align: justify;"> 2 red onions</li>
 <li class="li1" style="text-align: justify;"> 1.5 goat cheese logs</li>
 <li class="li1" style="text-align: justify;"> 4 cloves of garlic</li>
 <li class="li1" style="text-align: justify;"> 1 tablespoon finely chopped thyme</li>
 <li class="li1" style="text-align: justify;"> Salt and pepper from the mill</li>
 <li class="li1" style="text-align: justify;"> 10 slices coppa</li>
</ul>

Preparation :
Preheat the oven to 180&deg;C (Gas mark 6).
Peel the onions and cut them into slices.
Wash the eggplants and cut them into thin slices of the same thickness. Do the same with the tomatoes.
Cut the goat cheese logs into slices.
Rub the dish with the garlic cloves and finely chop the remaining cloves.
Arrange your vegetable slices, coppa and goat cheese slices in rows, alternating the colours. Slide in the minced garlic here and there.
Sprinkle the dish with chopped thyme, pepper and drizzle with olive oil .
Place your dish in the oven and cook for about 1 hour.
