<a href="http://bar1805ibiza.com" target="_blank" rel="noopener">Bar 1805 Ibiza </a>is the brainchild of visionary cocktail artisan Charles Vexenat, an avant-garde Frenchman with an Ibicenco heart. His bohemian Sa Penya speakeasy is named in honour of Henri-Louis Pernod, who launched the mythical green liquor&rsquo;s first recognisable brand, Pernod Fils, in 1805. Charles learnt his trade as an apprentice to some of the world&rsquo;s most highly regarded barmen and has received numerous industry awards during his career. He is a pioneer of Ibiza Town&rsquo;s underground cocktail scene and takes L&rsquo;OFFICIEL IBIZA on a late-night tour of his favourite haunts and their top tipples.

Climb two flights up the stone stairs behind the Croissant Show to find the bar that opens for 180.5 days only. Order the Green Beast, my signature creation that blends French Absinthe, fresh lime, sugar and cucumber. A very refreshing cocktail best enjoyed at sunset. High Tides at Paradise Lost
Head down a few steps to carry on the evening at best rum parlour in town. <a href="https://www.paradiselostibiza.com" target="_blank" rel="noopener">Paradise Lost</a> is where the pirates of the island hang out. Order Jimmy&rsquo;s signature twist on a Rum Sour with coconut wash rum, lemongrass, soft spice syrup and lime juice.

To close the night; the team at bijou drinking den Bul&iacute;n have created a well-crafted cocktail list. My favourite is Algo Mas Que Amigos, inspired by the classic G&amp;T with kaffir lime and bergamot-infused gin, homemade basil syrup and red peppercorn tonic.
